This recipe is for two pies.
Ingredients:
4 egg yolks (save the whites separately)
1/2 cup cocoa powder
2/3 cup flour
2 cup sugar
1large can evaporated milk + 1 can of water
Pinch of salt
2 TSP vanilla
2 TBSP butter
2 pie crusts (store bought is fine)
With the exception of evaporated milk/water and vanilla, mix all ingredients in a large, heavy bottomed, deep saucepan.
Pour a small amount of milk into the mixture, stil. Pour a little more to blend and get the lumps out. Keep adding milk until you have used the milk + the can of water.
Add 2 TBSP butter to the mixture. Cook and stir constantly. Start on above medium heat, then reduce heat as mixture thickens, making it to medium. Cook about 5 minutes.
Mixture will get thick and lumpy when almost finished.
Turn off heat and keep stirring briskly. Add vanilla flavoring, stir.
Pour half of the mixture into an already browned pie shell, and then pour the other half into the other pie shell.
Pre-heat oven to 450*
While pie is cooling, make meringue for the top with the egg whites.
Add meringue on top, then place pies in pre-heated oven. Turn the oven off when you place the pie in the oven, it will brown itself.
